After distillation, the Gold of Mauritius Dark Rum matures in oak barrels, where it harmonizes its taste and absorbs fine aromas from the wood. It is then adjusted to an alcohol content of 40% vol. and bottled in the shapely and distinctive bottles. On the nose, the Gold of Mauritius Dark Rum shows fine notes of banana, sugar cane and rock candy. On the palate, nuances of oak, dried fruit, tobacco and papaya can be detected. However, when you consider the origin of the Lazy Dodo Rum, it becomes clear why the connection is not so far-fetched. The Lazy Dodo Rum comes from the island of Mauritius. The island state in the southwest of the Indian Ocean is considered one of the best places in the world for growing sugar cane because of its humid and warm climate, as well as its topography and very fertile soil. The rums produced locally are of a correspondingly high quality and are popular and sought after by rum lovers around the world. The island's heraldic animal is the legendary dodo bird, which has been considered extinct since the end of the 17th century. The dodo was a flightless bird, around one meter tall, that fed mainly on fermented fruit, nested on the ground and was considered to be slow and comfortable. Since the dodo had no natural enemies, it was considered to be very trusting and had no escape or defense behavior. This made it easy prey for humans and introduced, feral pets. Even if it sounds a bit harsh, the dodo is considered a "prime example" of a species eradicated by humans and this rum wants to make a small contribution to remembering this. The Lazy Dodo Rum The Lazy Dodo Rum is produced on one of the most fascinating plantations in Mauritius. The property includes a botanical garden with gigantic dimensions of 37 hectares as well as seemingly endless sugar cane fields, which is why this plantation is considered one of the most important on the island. The molasses obtained from the sugar cane grown on site is naturally fermented and carefully distilled by a master distiller. The individual rums for the Lazy Dodo Rum are then aged for up to 12 years in various types of barrels. In addition to French oak barrels, new barrels made of American oak, former bourbon whiskey barrels and some barrels that previously contained sugar syrup are used.
