The story of Professor Cornelius Ampleforth's Cask-Aged Gin

For several years now, one man has been causing a stir in the spirits scene. His name: Cornelius Ampleforth. Ampleforth, generally known as the "Mad Professor", began producing extraordinary spirits in his own home at an early age. At some point he decided to turn his hobby into a profession and founded his own small spirits factory in autumn 2011.

The aim of the factory is to use artisanal methods to bring long-forgotten spirits back to life or to create new, innovative products. Cornelius Ampleforth only uses high-quality basic ingredients, which he selects himself.

The production of Professor Cornelius Ampleforth's Cask-Aged Gin

The basis for the Cask-Aged Gin is Professor Cornelius Ampleforth's Bathtub Gin. Like almost all Ampleforth products, this is produced in small batches of just 30-60 bottles. This corresponds roughly to the quantities in which so-called Bathtub Gin was produced illegally during American Prohibition. The botanicals used by Professor Cornelius Ampleforth for the Bathtub Gin include juniper, coriander, cinnamon and orange zest. After the herbs and spices have been added to the high-quality neutral alcohol, the maceration is constantly monitored and its progress is continuously sensorially tested by Professor Ampleforth. The botanicals are removed at the best possible time and the Bathtub Gin is ready for the second step: storage in the barrel.

Ampleforth uses very small barrels with a volume of just under 50 liters to store his Bathtub Gin. This means that the barrels have a large surface area compared to their volume. This means that the barrel releases more aromas in a shorter time and the Bathtub Gin already has fine notes of vanilla and caramel after a storage time of just three to six months. After the professor considers the Cask-Aged Gin to be perfect, it is bottled at a strong 43.3% ABV. The bottles of Professor Cornelius Ampleforth's Cask-Aged Gin are wrapped in brown paper and sealed with twine and black sealing wax.

On the nose, Professor Cornelius Ampleforth's Cask-Aged Gin has earthy juniper notes and hints of vanilla, butterscotch and dried herbs. On the palate, Professor Cornelius Ampleforth's Cask-Aged Gin is very rich and creamy.
