The history of Guyanese rum

Guyanese rum has an eventful history. The current colonies of Demerara, Essequibo and Berbice were once owned by the Dutch crown, but changed hands several times in 1763 after a slave uprising. In the years that followed, the British also owned the colonies for a time and began to build sugar cane plantations. This was accompanied by the installation of distillation plants that distilled the remains of sugar production into rum. The production of rum had another purpose, however, because the high-proof "firewater" was used to sterilize the water supplies on board the British Navy. At that time, every sailor was entitled to a daily portion of 0.5 litres of rum per day (!) to make their drinking water germ-free. In this way, up to 300 distilleries in Guyana ensured sufficient supplies of rum. Due to the discoveries of Louis Pasteur and other scientists, the rum rations for the sailors were steadily reduced and finally abolished altogether. This also meant the demise of the rum industry in Guyana. Of the hundreds of distilleries that once existed, only one remains today, and this is also responsible for the El Dorado Rum 12 Years: Demerara Distillers!
