Cartavio Rum XO 18 years 0.7L 40% Cartavio Rum takes its name from the city of the same name in the district of Santiago de Cao in Peru. Initially, the "Grace Sugar Company" processed molasses residues from sugar production, but as early as 1891, sugar cane was deliberately grown for rum production. The Unidas distillery, which produces Cartavio Rum, places great value on the most modern production techniques, without losing sight of tradition. Cartavio Rum has been sold since 1929 and this XO was first introduced in 2009 to mark its 80th anniversary.Cartavio works with two stills. An old pot still produces heavy, very complex rums, while a modern continuous distillery produces light and fresh rums. Both rum styles have found their way into this excellent XO, whose individual spirits have matured for 18 to 30 years in various barrels such as ex-sherry, ex-bourbon and French white oak barrels.The long maturation period gives the rum an incredibly soft aroma and the large number of different barrel types ensures an incredible taste complexity. The dark amber-colored rum offers a firework of aromas on the nose such as tobacco, chocolate, vanilla and leather. The palate also reveals an incredible variety of aromas of toffee, baked banana, raisins, pepper and oak. The aftertaste is very, very long and wonderfully velvety.
