Boe Gin inspired by an early Genever recipe

Boe Gin is inspired by a historical recipe by Franz de la Boe, also known as Dr. Silvius, who in turn is often referred to as the creator of gin, although this is often doubted in many places. In any case, the famous chemist, physiologist and anatomist worked in 1650 on the extraction of essential oils from juniper berries by infusing them in high-proof alcohol - juniper berries were long considered an effective remedy for kidney problems.

Boe called his tonic Jenever, derived from the Dutch word "jenerverbes" for juniper, and his drink quickly became a popular medicine for the aforementioned kidney problems and also to lift the general mood through alcohol consumption.

Boe Gin - Scottish Gin from Scotland

Boe Gin is made in the Scottish village of Doune with 13 hand-picked botanicals, including wild cassia bark from the Scottish island of Skye. Distillation takes place in Carterhead stills, which are extremely rare these days, and a complex steam infusion process.
In this complex process, the aromatic substances of the herbs, barks and spices used are combined with the grain alcohol used while they are evaporated. This means that the botanicals are treated gently and cannot overheat, while the fragile oils extracted retain their full aroma.

The botanicals also used in Boe Gin include coriander seeds, angelica root, ginger, orris root (a form of lily), grains of paradise, orange and lemon peel, cardamom seeds, liquorice, almonds, cubeb pepper and cassia bark, also known as Chinese cinnamon and one of the oldest known spices in the world.

Boe Gin has beautiful floral notes on the nose, accompanied by tones of herbs, pine and exotic vanilla. Wonderfully complex on the palate with a variety of impressions. Notes of herbs, lavender, spices such as cinnamon, angelica and again vanilla. Boe Gin is strong and intense and with its 41.5% ABV it is no lightweight. The aftertaste is warming without leaving too much room for the alcoholic burn. Boe Gin forms an exquisite base for a refreshing gin & tonic and was recently the clear favorite in several gin tastings.

To create An Dúlamán we capture the "Draíocht na Farraige" (the magic of the sea) by using five locally harvested seaweed varieties and six other botanicals. This unique combination makes An Dúlamán as special as the Donegal coast itself. To ensure An Dúlamán retains its characteristic complexity and smoothness, we have learned that Méabh (our still) prefers a low alcohol content in the pot and a narrow temperature range to treat the delicate seaweed.
