Solera Especial Collection

Jalifa 30 Years Amontillado is another product in the Solera Especial Collection of the well-known Williams & Humbert Bodega from Andalusia. In addition to it, there are two other products in the series, the Palo Cortado Dos Cortados and the Pedro Ximenez Don Guido. All three have the additional designation VORS, which means that they are wines that are over 30 years old.

Maturation

This special bottling also requires a special type of grape. The Palomino grape variety from the Balbaina terroir in Las Conchas was chosen for this.
The Amontillado sherry variant has undergone a special maturation process. First, it matures for several years covered in a foam-like layer made up of flor yeast. After a certain time, these yeast cultures die off and oxidative maturation sets in. The distillate is now exposed to the direct influence of oxygen.

The taste

The aromas are similar on both the nose and the palate, but complement each other with a few notes on both sides. The first impression is of fruit, caramel and roasted almonds. Notes of herbs, tobacco and nuts quickly join in. The Jalifa Amontillado also has a salty taste. The complexity of this VORS sherry becomes clear when vanilla, spices and oak notes are added.
In the long finish, the nut aromas are much more present.

The small but very subtle difference that allows a brandy to be called sherry lies in its origin. If it is a sherry, it will always come from the province of Cadiz in Andalusia, specifically between the triangle of cities Jerez de la Frontera, Sanlucar de Barramenda and Puerto de Santa Maria. Only brandies produced here can officially bear this name. Another special feature of sherry is the grape variety used. Only three special varieties may be used for this: Palomino, Pedro Ximenez and Moscatel. Sherry Lacave Oloroso There is a crucial difference in the preparation of the Oloroso variant compared to, for example, the Fino variant. Although it has British origins, it is now a distillery in Jerez de la Frontera, Andalusia. As early as 1877, Sir Alexander Williams, a wine expert for sherry wines, and Arthur Humbert, a specialist in international relations at the time, dedicated themselves to the Williams & Humbert Bodega. They became known above all for their special storage and the resulting special quality. This is the solera process. Solera process The Dry Sack Medium Sweet Solera Especial 15 years is also a sherry that was produced using the solera process. The barrels are stacked in a pyramid shape, then a certain amount is taken from a barrel in the bottom row and filled into a barrel in the row above. This is continued until the top barrel, where the final product is then found. Products made using this process therefore always contain a mixture of short, medium and long-aged distillates. Williams & Humbert As You Like It Medium Sweet Sherry 0.5L 20.5% Cultural asset from Spain Anyone who wants to delve into the world of sherry flavors should try to start with a product from home. Andalusia, or rather the area around Jerez, is known worldwide for high-quality (and sometimes really inexpensive!) wines and sherries. You should do a bit of reading beforehand, as there is a lot of variety. Medium, cream, Oloroso and Amontillado are just a few special types, so you have to find out for yourself which product you particularly like. The Bodega Williams & Humbert is known for its sweeter blends, all of which are matured using the special Solera process, in which different barrel vintages are repeatedly blended together. Amontillado Blend The Montillado sherry variant is a special maturation process. The addition of yeast cultures creates a foamy layer of flor yeast. This prevents the distillate from reacting with oxygen. After a certain time, the yeast cultures die off and the so-called 'oxidative maturation' begins. The result is a very dry sherry. 'Blend' in this case indicates that a large proportion of Amontillado is still contained in order to be clearly perceptible, but it has a more noticeable sweetness.
