Don Guido Sherry Solera Especial PX 20 years 0.5L 18%

This extremely delicate Pedro Ximenez (PX) sherry is produced by Bodegas Williams & Humbert in the Andalusian city of Jerez de la Frontera. Jerez looks back on a wine-growing tradition that goes back over 3000 years and gave the legendary sherry its name.

After the white PX grapes have been dried in the sun on the "Almijar" for 15 days, a large part of the water has evaporated through the thin skins of the grapes and the sugary, raisined grapes remain. These are pressed in special presses and the resulting must is immediately fortified to 9% vol.

After a maturing period until the cold period, the wine is fortified again, this time to 18% vol., and then transferred to the traditional Solera system. Several rows of barrels are stacked on top of each other and only the wine is taken from the bottom row of barrels for bottling. The wine taken out is refilled from the row of barrels above and the upper row of barrels is always filled with the youngest wine. This results in an incredibly harmonious taste.

Don Guido Sherry Solera Especial PX matures for over 20 years in the Solera barrels and is bottled as a black mahogany-colored, viscous sherry. It flows into the glass like honey and has a characteristic aroma of raisins, nuts, oranges and figs. The aftertaste is very long, intense and warming. Ideal with sweet desserts and dark chocolate.

As early as 1877, Sir Alexander Williams, a wine expert for sherry wines, and Arthur Humbert, a specialist in international relations at the time, dedicated themselves to the Williams & Humbert Bodega. They became known above all for their special storage and the resulting special quality. This is the solera process.
