Quality liqueur wine from Andalusia

For the Canasta 20 Years Cream Sherry, a balanced blend of three grape varieties was chosen: Sobretablas, Palomino and Pedro Ximenez. Storage takes place according to Humbert & Williams in the Solera method, as well as in the Criaderas system in oak barrels. The corresponding aromas are created by the oxidation of the wood with the moisture and oxygen.

Taste in the sample

There are two well-known names for this type of sweet Oloroso Sherry: “Oloroso Dulce” or “Cream”, as is the case with this product. It is very gentle on the palate, velvety and warming due to the alcohol content. Aromas are clearly dried fruit and nuts, and a subtle association with raisins and browned sugar also spring to mind when tasting it.
This cream sherry goes best with almost any kind of dessert, but if you like, you can also drink it neat. In that case, however, it should be well chilled or at least drunk with a little ice.

The small but very subtle difference that allows a brandy to be called sherry lies in its origin. If it is a sherry, it will always come from the province of Cadiz in Andalusia, specifically between the triangle of cities Jerez de la Frontera, Sanlucar de Barramenda and Puerto de Santa Maria. Only brandies produced here can officially bear this name. Another special feature of sherry is the grape variety used. Only three special varieties may be used for this: Palomino, Pedro Ximenez and Moscatel. Sherry Lacave Oloroso There is a crucial difference in the preparation of the Oloroso variant compared to, for example, the Fino variant. While the Fino has the so-called flor layer, a foam-like layer that forms during the fermentation process due to the added yeast and thus prevents contact with air, this is deliberately omitted from the strong Oloroso. The aim here is to allow oxidation with oxygen as much as possible in order to increase the formation of acid. Distinctive taste Sherry Lacave Oloroso surprisingly impresses with a finely balanced combination of softness and a youthful touch. The aroma is dominated by fruity dried fruit notes. A certain tartness comes from the walnuts. Williams & Humbert As You Like It Medium Sweet Sherry 0.5L 20.5% Cultural asset from Spain Anyone who wants to delve into the world of sherry flavors should try to start with a product from home. Andalusia, or rather the area around Jerez, is known worldwide for high-quality (and sometimes really inexpensive!) wines and sherries. You should do a bit of reading beforehand, as there is a lot of variety. Medium, cream, Oloroso and Amontillado are just a few special types, so you have to find out for yourself which product you particularly like. The Bodega Williams & Humbert is known for its sweeter blends, all of which are matured using the special Solera process, in which different barrel vintages are repeatedly blended together. Amontillado Blend The Montillado sherry variant is a special maturation process. The addition of yeast cultures creates a foamy layer of flor yeast. This prevents the distillate from reacting with oxygen. After a certain time, the yeast cultures die off and the so-called 'oxidative maturation' begins. The result is a very dry sherry. 'Blend' in this case indicates that a large proportion of Amontillado is still contained in order to be clearly perceptible, but it has a more noticeable sweetness. As you like it This special bottling was already available in the 1970s, but after falling demand and a general decline in interest in expensive sherry, it was discontinued. It is all the more pleasing that an untouched Solera from those years has been preserved. Since this was dry Amontillado, the As you like it series was intended to commemorate an old custom. Back then, people liked to add a little sugar to the strong, old Amontillado to make it more palatable. This time, the new edition of As you like it is the blend described above.
