Den Branntwein, aus rechtlichen Gründen in Deutschland auch Weinbrand genannt, zeichnet dadurch aus, dass er gebrannt wurde und deshalb um einiges länger haltbar ist als herkömmlicher Wein. Für die Herstellung gewinnt man aus Trauben einen Wein mit ca. 8 % Alkoholgehalt. Wobei dieser Wein noch nicht bekömmlich ist. Damit Sie hochwertigen Cognac online bestellen können, wird dieser Wein in den Wintermonaten in einer Brennblase destilliert. Hierbei wird die Flüssigkeit erhitzt, der dabei austretende Alkoholdampf in Rohren aufgefangen und wieder abgekühlt. Dadurch erhält man kondensierten Alkohol, der mit 27 bis 31 % Alkohol den Namen Rohrbrand trägt. In einem zweiten Kondensationsvorgang entsteht dann sogenannter Feinbrand mit 60-72 % Alkohol. Anschließend wird dieser Brand in Holzfässern gelagert, wo er seinen typischen Geschmack wie auch die dunkle Farbe erhält. Je nach Lagerungszeit können sich jede Cognac Sorte geschmacklich unterscheiden.
Eine Mindestlagerung von vier Jahren gibt es aber immer. Generell gilt: Umso länger ein Cognac reift, desto hochwertiger wird er. Warum das so ist? Weil die Spirituose pro Jahr in der Lagerung 1,5 % Alkohol verliert und deshalb auch milder wird. Nach der Lagerung verdünnt man den Cognac mit Wasser, bis er einen Alkoholgehalt von 40 % erreicht. Noch etwas Zuckercouleur dazu – und schon ist das Getränk ein echtes Geschmackshighlight. Eine beliebte Cognac Marke ist zum Beispiel Hine, der mitunter eine fruchtige Geschmacksnote trägt.
