The Plantation Fiji 2001 Single Cask Rum is based on molasses that was fermented for five days and distilled in 2001. It matured for a total of 21 years, including 19 years in Fiji in former American oak bourbon barrels. It was then shipped to France, where it rested for 1 year in former Ferrand cognac barrels before being finished for a further 4 months in Rozelieures single malt whisky barrels.
The nose reveals aromas of flambéed bananas, vanilla and hazelnut, followed by nuances of quince, peach, a hint of seaweed and marzipan. On the palate, the Plantation Fiji 2001 Single Cask Rozelieures Fumé Finish Rum 0.7L 45.8% is soft, fresh and slightly smoky, accompanied by notes of citrus fruit, passion fruit, vanilla and fresh herbs such as eucalyptus and mint. The finish is long-lasting.
