Their aim was to revive the lost Speyside style with malted barley and a hint of peat smoke. This traditional process dates back to the time when all malthouses in Speyside used peat as fuel, which gave the Benromach whiskies their characteristic taste. The reopening of the distillery in 1998 by Prince Charles marked the return of a lost Speyside single malt style. The distillery relies on tradition and craftsmanship. The highly qualified master distillers rely exclusively on their senses and experience to produce the award-winning handmade whisky. The four ingredients barley, water, yeast and a human touch form the basis. The mash is stirred by hand, water flow and grist are manually controlled and fermentation takes place in larch washbacks. Double distillation in bespoke copper stills produces a medium-strength spirit suitable for variable maturation periods. The quality of the casks, particularly first-fill oak casks after wort with bourbon or sherry, is crucial to the flavour and character of the whisky.
