In addition, we distill every week in Red Hook using the best non-GMO ingredients, including corn varieties like Baby Jane, which are grown exclusively for us. The water from the Tough Rock mines plays a central role in the production of our whiskeys. The limestone from these mines in Rosendale has been used in some of the most significant structures in New York and across the country, including the Brooklyn Bridge, the Empire State Building and the pedestal of the Statue of Liberty.
