These barrels are hand selected in our Red Hook neighborhood in Brooklyn, New York, and offered without chill filtration, complemented by the hard but sweet, pure limestone water from the legendary Rosendale Mines in upstate New York. In addition, we distill every week in Red Hook using the best non-GMO ingredients, including corn varieties like Baby Jane, which are grown exclusively for us. The water from the Tough Rock mines plays a central role in the production of our whiskeys. The limestone from these mines in Rosendale has been used in some of the most significant structures in New York and across the country, including the Brooklyn Bridge, the Empire State Building and the pedestal of the Statue of Liberty. Located just 100 miles north of our Red Hook location, the mines have accumulated pure fresh water over the years that now refines our whiskeys. This unique water, which draws its strength from the limestone, is our signature ingredient and gives every sip of Widow Jane whiskey the intense taste of New York.
