The subsequent distillation takes place in copper column stills that are over 20 meters high, producing a distillate with a strength of 68 - 70% vol. The Evan Williams Bourbon Whiskey is then diluted with spring water from the region to a cask strength of 62.5% vol. and filled into charred new barrels made of American white oak to mature for 4-20 years. After the maturation process is complete, the Evan Williams Bourbon Whiskey is bottled at a strong 43% vol.
