The Hali’imaile Distilling Company is located in the heart of Maui’s pineapple country, in the Makawao Upcountry.

Pau Maui Vodka represents true Hawaiian craftsmanship: It is distilled in small batches using unique stills and exclusively in-house developed processes. At the heart of the production process are the impressive 4.27-meter-high distillation columns made of 100% pharmaceutical-grade glass, which enable exceptional purity in a single distillation run. Pau Maui Vodka is made from Maui Gold pineapples, which thrive amidst centuries-old pineapple fields in Hawaii. This particularly sweet fruit has a high natural sugar content, making it ideal for fermentation—without imparting any pineapple notes to the vodka. The result is a clear, pure, premium vodka that originates from warm days, cool nights, volcanic soil, and fresh, pure water. Since the pineapple is perfectly ripe for only a few days, it is harvested at precisely the ideal moment. Only fruit at its peak of ripeness is used in production, giving Pau Maui Vodka its characteristically smooth, subtly sweet, and exceptionally mellow taste. Distilled multiple times and filtered five times, it impresses with its exceptional purity and smooth, refreshing clarity – a vodka that captures the essence of Hawaii in every nuance.

The takeover of the “Crown Distillery” in 1859 at the instigation of entrepreneur Gustav Ranin laid the foundation for the distillery’s products today. The distillery, which had already been in operation for 76 years, had already made progress before the time of Lignell & Piispanen under King Gustav III of Sweden set standards for the entire art of distilling in the country from the city of Kuopio. Today, the “Crown Distillery” has been family-owned for seven generations, which is partly why the Arctic wilderness flows into the taste of the distillates and shapes the country. So it is not surprising that the taste of “Gustav Tilli Dill Vodka” by Lignell & Piispanen always reminds one of more northern regions. The production and craftsmanship behind Gustav Dill Vodka The basis for this flavoured vodka is the fine Gustav Vodka, which is still distilled according to the original “Chase Islay Whisky Cask Aged Vodka” recipe. The care with which the distillation is carried out is quite remarkable and, compared to other mass production of vodka, an extraordinary special feature. It gives the product an incomparable purity and softness. The traditional art is still the central focus of production to this day and at the same time promotes the impressive quality. The dill vodka is produced through a complex maceration process and thus takes on the fine taste of the plant, but is not completely suppressed by it. The natural, excellent aromas blend in with the distillate's own taste in a present but not overpowering way. This well-balanced flavoured vodka is known by its name throughout Finland and is a perfect accompaniment to regional fish and seafood, but also combined with basil it makes a delicious gin and tonic.
