The fine sugar cane that provides the molasses as the basis for this rum is grown and harvested on the company's own plantations. After a molasses fermentation of around 2 days, the extensive distillation takes place in various column pot stills. Then the decisive maturation phase for the distillate begins, which lasts an impressive 15 years. First, this maturation takes place in ex-bourbon barrels made of American white oak using the complex Solera process, followed by storage in former ex-Oloroso sherry barrels. This unique combination gives the rum its sherry cask finish, which produces sweet and rich aromas with typical sherry notes of dried fruit as well as its reddish amber color. Notes of sherry, dried exotic fruits, raisins and light wood tones unfold on the nose. The palate experiences something similar, combined with a delicate and sophisticated blend of fruit and smoke.
