This time-consuming and labor-intensive method of distillation produces an unrecognizably pure and aromatic grappa. He has specialized in first-class, clean and expressive products and wants to present both very traditional distillates and experimental products. The master distiller sources the raw materials for his distillates mainly from the South Tyrol region as well as the Seiser Alm and neighboring fruit and wine regions. In terms of the product range, he does not want to focus only on regional grappa or other fruit brandies; his range also already includes rum and gin. Grappa Blauburgunder A classic grape variety for cooler wine-growing regions is the Pinot Noir. Depending on the region you are in, you will often find the name Spätburgunder or Schwarzburgunder; on the Italian side it is known as Pinot Nero. However, not the whole fruit itself is used to make grappa, but rather the pomace, the so-called press residue. This falls during wine production after the juice is pressed out of the fruit and is the predominantly solid residue of the vines. This is then heated indirectly over a water bath and the rising vapors are then cooled. Using different temperatures, an attempt is made to dissolve the individual substances from the pomace residue several times. The distillate is then bottled in steel tanks or wooden barrels, depending on the further processing required. Before it is finally bottled, the distillate is brought to drinking strength by adding filtered water. The aroma of the Blauburgunder Grappa ranges between sweet, ripe cherries, wild berries and a hint of bitter almond aroma. With the aim of creating a distillery that specializes in creating products from South Tyrol and other surrounding regions, Rabanser founded the Zu Plun distillery, which today not only produces grappa, but also other spirits such as gin and rum. Here, however, you will always find a connection to the region, be it in the form of alpine herbs, special spices or in the form of old grape varieties from small wineries in the area. Rose Muscat Grappa Rose Muscat grape vines are mainly intended for dessert wines because of their dominant sweetness. This rarity among grape varieties belongs, as one might guess, to the group of Muscat grapes and, according to stories, was brought from Sicily to Kaltern by the Prince of Campofranco in the mid-19th century. Here it has adapted well to the cooler climate compared to its homeland and is highly valued there. Rabanser also wanted to create a grappa from this special grape variety and here too he used the pomace from the wine production of small wineries to produce the distillate. He has created a sweet grappa that is full of aromatic berry aromas, floral tones and the memory of blooming roses. Similar to the mouthfeel of a dessert wine made from rose muscat grapes, the grappa is very soft on the palate and offers a full-bodied, complex finish with a hint of nutmeg.

Grappa made from Gewürztraminer What many people don't know is that Traminer does not have its origins in Italy, but probably in Egypt. Over the years it came to Italy by water and has been grown there for many centuries in the area around Tramin, thus getting its name. Pomace from selected wineries in the South Tyrolean region was also used for Gewürztraminer. The pomace from small wineries contains significantly more liquid than that from industrial plants. This means that a more powerful base product serves as the starting material for the distillate. The grape variety is known for its complex, spicy bouquet. In the distillate, however, it has a rich, floral aroma. On the palate, it is soft and develops a fruity spiciness.
