A Family Legacy Dating Back to 1897

The Nonino family story began with Orazio Nonino, who travelled from farm to farm with a mobile still, distilling grape pomace and fruit from the surrounding region. The foundation of the family distillery in Ronchi di Percoto in 1897 marked the beginning of an exceptional distilling tradition. From the 1960s onwards, Nonino placed increasing emphasis on research and the continuous improvement of grappa production. In 1973, the family introduced Monovitigno Nonino, the first single-varietal grappa, helping to establish a new chapter in Italian grappa culture.

Single-Varietal Grappa Made from Merlot Pomace

Nonino Il Merlot is produced exclusively from the pomace of Merlot grapes. Following destemming and carefully controlled fermentation, the grape pomace is distilled in one of Nonino’s discontinuous stills. This traditional and meticulous distillation method allows the distillers to express the distinctive characteristics of the original grape material with precision, resulting in an elegant and expressive grappa.

Here it has adapted well to the cooler climate compared to its homeland and is highly valued there. Rabanser also wanted to create a grappa from this special grape variety and here too he used the pomace from the wine production of small wineries to produce the distillate. He has created a sweet grappa that is full of aromatic berry aromas, floral tones and the memory of blooming roses. Similar to the mouthfeel of a dessert wine made from rose muscat grapes, the grappa is very soft on the palate and offers a full-bodied, complex finish with a hint of nutmeg.
