"Ginja" is a traditional liqueur from the village of Curral das Freiras on the island of Madeira. Curral das Freiras, also known as the "Nuns' Corral", was created in the 15th century as a shelter from pirate raids. The village, named after a group of nuns who sought refuge, was for a long time only accessible via steep paths, which contributed to its isolation and preservation of culture and traditions. Legend has it that the original recipe for Ginja liqueur was introduced by Dominican monks in the 17th century and served as a remedy for various ailments.
Engenho Novo da Madeira's Ginja liqueur is made from carefully selected sour cherries from Curral das Freiras, which are left to macerate for at least a year in a mixture of Madeira wine, Madeira rum and alcohol. Once the liquid is separated, it is aged for 2 or 3 years in 225-litre French oak wine barrels (ex-Madeira). After the aging process, the liqueur is filtered, bottled and the cherries are placed inside the bottle one by one by hand. Barbeito Sweet Madeira wine is used, made from Tinta Negra Mole grapes aged for three years, and a three-year-old rum aged in Madeira wine barrels.
