As one of the few spirits producers in the Netherlands, the Zuidam distillery still produces its products in a very traditional way. All ingredients processed by Zuidam are 100% natural and are processed using traditional handcraft. In addition to high-quality genever, the distillery also produces rum, whiskey and liqueurs. All product recipes are developed by the owner Fred van Zuidam and his son Patrick. This family collaboration is a special feature in the spirits industry, where many products are often only developed by specialists in the laboratory. When creating recipes, Fred and Patrick from Zuidam see themselves as artists who work with aromas instead of colors. In addition to the quality of the contents, Zuidam also attaches particular importance to the design of the bottles. These are not run-of-the-mill bottles off the production line, but are intended to express the respective product particularly well.

The development of the Zuidam distillery

In 1975, Fred van Zuidam founded the Zuidam distillery with a clear vision. His distillery should only produce very exclusive products, which are manufactured in a very traditional way. With just one pot still and a small production line, Zuidam began producing his first spirits on 300 m². However, success was not forthcoming and it took over 10 years before Zuidam had earned a reputation as a producer of the highest quality distillates. However, Zuidam was only able to establish itself on the market when his wife Helene von Zuidam began to take care of the design of the bottles. Nowadays, the two brothers Patrick and Gilbert take care of the production and marketing of the products - under the constant supervision of their parents, of course. The distillery site now includes four copper pot stills, four production lines and over 1000 oak barrels on a good 3600 m².

What does Zuidam Oude Genever 5 years taste like

Only the very best barrels are selected for this special bottling from Zuidam. The genever stored in them is made from barley, wheat malt and corn. After fermentation and distillation of these basic products, various botanicals such as aniseed, juniper and liquorice root are added for maceration. This is followed by storage in barrels made of the best oak for at least 60 months. On the nose and palate, the genever shows fascinating aromas of malt, oak, vanilla and toffee. The long aftertaste is also very malty and extraordinarily smooth. A great genever!

The malted barley, rye and corn used for Zuidam's Genever are still milled in the old-fashioned way by Dutch windmills. In addition to its traditional character, the milling process by windmills also has a very practical advantage. The slow rotation of the millstones means that there is virtually no frictional heat that could affect the quality of the respective flour. The production of Genever After grinding, the mashing begins. For this, the ground corn, rye or malted barley is mixed with hot water and the enzymes break down the starch into sugar. This is followed by fermentation, which takes place at a very low temperature, which gives the genever its fruity aromas. After a week of fermentation, the mash is distilled three times by hand in copper pot stills. The company's Korenwijns are even distilled four times. In the small pot stills, the alcohol vapors come into contact with a particularly large copper surface, which reduces the proportion of undesirable substances in the end product. Zuidam Oude Genever 1 Year 1.0L 38% In the 17th century, the physicist Franciscus Sylvius laid the foundation for a worldwide success story with the creation of the first genever. However, the genever of that time was hardly comparable to today's, and even less so to modern gin. Due to a lack of knowledge and know-how, the raw distillates were harsh, burnt, and rough. Maceration with juniper, in addition to its purported healing properties, also served to improve and round out the flavor of the genever. Old Tom Gin was the next step in its development, but still required added sweetness to appeal to consumers at the time. Only with the invention of the innovative column still process could pure and smooth raw spirits be produced, paving the way for today's dry gin. At Zuidam, we still distill traditional genever, but now with 50 years of experience. This is how Zuidam Oude Genever 1 Year is created, which, after a constant pursuit of perfection, finally finds its way to consumers. Zuidam Oude Genever 1 Year is made from equal parts rye, barley, and corn. After the grains are traditionally milled in windmills, the mash is fermented at a cool 20°C, during which the first alcohol is produced from the sugars. After five days, the resulting beer is distilled three times to obtain a clear yet highly aromatic raw spirit. Following this process in handcrafted copper pot stills, a specially defined blend of spices and herbs is added and redistilled to achieve its unique flavor. The Oude Genever then matures in American white oak barrels, developing its final character. On the nose, it displays clear notes of juniper, combined with vanilla and subtle oak. On the palate, these aromas complement each other with wonderful toffee and the fudge known in England, creating a full, slightly fruity experience that elevates the old genever to modern standards without denying its origins.
