This was also noticed by Joseph Noilly and Claudius Prat, who then developed a storage method for Noilly Prat in which the Noilly Prat is exposed to the four seasons. The production of Noilly Prat Dry Vermouth The production of Noilly Prat Dry Vermouth requires attention as well as a lot of time. The base wines for Noilly Prat Dry Vermouth are made from sun-drenched grapes of the Picpoul and Clairette grape varieties from the Marseille region. The wines then mature outdoors in wooden barrels that are up to 60 years old, giving them their unmistakable aroma.
