The history of the Spanish manufacturer Williams & Humbert Bodega began more than 130 years ago. With the "Why & Mel Liqueur", the world-renowned company has brought a really good liqueur onto the market, which is almost unique with its special taste experience. By storing wine and brandy in a special way, for example using the Solera process, the company was able to focus on production, which is mainly focused on exports. It has been characterized by its entrepreneurial finesse since the beginning, as it has entered into various partnerships and collaborations over the years, which have now led to it being included in Spain's largest list of trading companies. All of Williams & Humbert's technical facilities can be found along the country road in the bodegas that connects Jerez and El Puerto. This includes the systems for fermenting, mixing, cooling and bottling all the delicious spirits on offer.

Naturally caramel

With “Why & Mel”, a liqueur was created that is blended on the basis of carefully selected malt whiskeys and refined with natural caramel. During production, the focus was on a selection of high-quality malt whiskeys that were allowed to age in American oak barrels. The pleasant accent of caramel can be detected even on the nose.

The Pulteney distillery was built in 1826 by James Henderson and remained in family ownership until the 1920s. This prevents the distillate from reacting with oxygen. After a certain time, the yeast cultures die off and the so-called 'oxidative maturation' begins. The result is a very dry sherry. 'Blend' in this case indicates that a large proportion of Amontillado is still contained in order to be clearly perceptible, but it has a more noticeable sweetness. As you like it This special bottling was already available in the 1970s, but after falling demand and a general decline in interest in expensive sherry, it was discontinued. It is all the more pleasing that an untouched Solera from those years has been preserved. Since this was dry Amontillado, the As you like it series was intended to commemorate an old custom. Back then, people liked to add a little sugar to the strong, old Amontillado to make it more palatable. This time, the new edition of As you like it is the blend described above.
