The former POISSON confectionery was converted into the PÈRE LABAT distillery by Mr. E. Rameau at the beginning of the 20th century. The name "Father Labat" honors the missionary Jean-Baptiste Labat, who developed the distillation of fresh sugar cane juice. Although he himself never visited the island of Marie-Galante, the tradition of "Father Labat" is continued and the rums are produced to the highest agricultural quality. The careful selection of high-quality sugar cane stalks enables direct transport to the distillery after the regional harvest. Long stalks are crucial for mass and high sugar content. The valuable harvest is crushed, extracted into cane wine and fermented. The traditional distillation in red copper columns preserves the variety of aromas of the fresh sugar cane. Père Labat stands out by relying on traditional production, while many distilleries use molasses as a by-product of sugar production. The PÈRE LABAT distillery on the French island of Marie-Galante is one of the oldest that still distills traditionally today. The island is known for the typical Rhum Agricole made from fresh sugar cane juice.
