History and production of the Journeyman Last Feather Rye Whiskey:
The Journeyman Distillery from the rural town of Three Oaks, in the US state of Michigan, was opened in 2011 by the friendly master distiller Bill Welter and has been producing first-class organic spirits ever since.
While the term craft distillery has been used rather inflationary in the recent past, it is all the more gratifying that the Journeyman Distillery has established itself on the scene as a distillery that embodies the values of the craft movement like no other. Elaborate handwork, an awareness of tradition, the use of organically grown ingredients, the pursuit of the best quality and the love and passion for their own product are the cornerstones of the family business.
All spirits are organically certified and are made from locally grown grain. At Journeyman, the main focus is on traditional American whiskey. In addition, gin variations, vodkas, rums and special creations have also been released in limited editions in the recent past.
The distillery itself was built in a former corset factory. In the 18th, 19th and early 20th centuries, corsets made of featherbone were produced there, which were in demand worldwide due to the innovative production method and gave the town of Three Oaks a certain notoriety.
Today, this role is taken on by the Journeyman Distillery with the award-winning Journeyman Last Feather Rye Whiskey. The grain mash consists largely of organic rye. Wheat and barley, also organically grown, are also used.
Master distiller and founder Bill Welter developed and perfected the recipe for his rye whiskey at the Koval distillery in Chicago. The first rye whiskey was eventually distilled at Koval, filled into barrels there and then transported by pickup to the Journeyman Distillery for storage. In reference to the Ravenswood district in Chicago, where the Koval distillery is located, the whiskey was eventually called Ravenswood Rye Whiskey.
All spirits now come from the company's own distillery. For legal reasons, the name Ravenswood Rye could no longer be used and so only one feather, the "Last Feather", remained of the once proud raven.

The Journeyman Last Feather Rye Whiskey is a complete surprise on the nose. The typical rye spice is initially dominated by intense, fruity aromas. Oranges, bananas, honeydew melons and pears are present, along with notes of nuts, butter biscuits and baked apples. Over time, the rye takes over the reins and ensures a strong and extremely complex aroma.
The taste of the Journeyman Last Feather Rye Whiskey initially shows complex grain notes, marble cake and oak. This is followed by cinnamon, black pepper, spicy rye bread and cloves. The Journeyman Last Feather Rye Whiskey's interplay of fruity, sweet and spicy aromas creates a multi-layered taste experience that is absolutely unique for a rye whiskey. Nevertheless, it does not lack in power and intensity. The finish is medium-long and dry, with herbal notes of coriander and ginger.
Overall, the Journeyman Last Feather Rye Whiskey is an extremely successful rye whiskey that will delight you with its unique flavor nuances.
