The Dos Maderas Rum PX 5 + 5 is no ordinary rum. The story of the Dos Maderas Rum PX 5 + 5 begins in the Caribbean. There, the individual rums for the Dos Maderas Rum PX 5 + 5 are distilled from the best sugar cane in Guyana and Barbados. Guyana and Barbados represent a centuries-old rum tradition. While Guyana is known for very powerful, intense rums, the rums from Barbados are characterized by their fine, aromatic nuances. After the individual rums for the Dos Maderas Rum PX 5 + 5 have been blended by master hands, they mature for at least five years in the tropical temperatures of the Caribbean. Barrels made of American white oak are used for storage; they are particularly popular because of their mild aroma. After this initial storage period, the Dos Maderas Rum PX 5 + 5 is imported by Williams & Humbert to Jerez in Andalusia, Spain. Here the Dos Maderas Rum PX 5 + 5 is matured for a further three years in barrels that once contained the best sherry. The Dos Maderas Rum PX 5 + 5 is finished for two years in former Pedro Ximinez (PX) sherry barrels, the high-quality contents of which remained in the barrel for over 20 years. This unusual and very exclusive maturation process gives the Dos Maderas Rum PX 5 + 5 its unusual and very fine aroma!

For Dos Maderas, rum from Barbados and Guyana is mixed. The first maturation phase of Dos Maderas rum takes place in the home country in a tropical climate. After this first phase, the rum is transported to Europe to be further processed by the company Bodegas William & Humbert. They are actually responsible for Spanish sherry and brandy and this is exactly what is used for the further resting period of the rum. It is now allowed to mature further in old sherry and brandy barrels. Sometimes there can even be a third decanting into a different type of barrel. With the Dos Maderas Seleccion Rum, as always, a very special gem from Bodegas William & Humbert is coming onto the market. For the Dos Maderas Rum Seleccion, a blend from the Dos Maderas collection is produced. The basis is the Dos Maderas 5+5 PX, from which certain barrels are selected. This is then married with various other blends of rum from Barbados and Guyana. In the Solera process, the rum is also allowed to mature for a decade in ex-bourbon barrels made of American white oak. The taste This rum combines excellent and noble aromas of an old classic rum with clear notes of sherry oak. A pleasant sweetness from the Pedro Ximenez sherry for the Dos Maderas 5+5 PX can be clearly tasted. These aromas are complemented by smoky top notes from storage in bourbon barrels. Unfortunately, not much background information can be found out about this newcomer. What is clear, however, is that the Tripulante Caribbean Elixir is a dark rum blend from various Caribbean islands. We know nothing about maturation and storage, as many rums from the Caribbean usually come onto the market with an addition such as XO or Anejo, which stands for special (long) maturation. The Tripulante does not have such an addition directly, but the addition 'Elixir' can be found here. So you might think that this name also means particularly long storage in the sense of syrupy. In the case of rum, however, this addition refers to a rum-based distillate, which is usually flavored, and is therefore more aimed at the meaning of an extract of medicinal plants and various additives dissolved in alcohol. Although it has British origins, it is now a distillery in Jerez de la Frontera, Andalusia. As early as 1877, Sir Alexander Williams, a wine expert for sherry wines, and Arthur Humbert, a specialist in international relations at the time, dedicated themselves to the Williams & Humbert Bodega. They became known above all for their special storage and the resulting special quality. This is the solera process. Solera process The Dry Sack Medium Sweet Solera Especial 15 years is also a sherry that was produced using the solera process. The barrels are stacked in a pyramid shape, then a certain amount is taken from a barrel in the bottom row and filled into a barrel in the row above. This is continued until the top barrel, where the final product is then found. Products made using this process therefore always contain a mixture of short, medium and long-aged distillates. Dry Sack 15 Años Solera Especial Due to the long maturation of 15 years, this sherry is bursting with complexity and at the same time appears elegant and mature. Andalusia, or rather the area around Jerez, is known worldwide for high-quality (and sometimes really inexpensive!) wines and sherries. You should do a bit of reading beforehand, as there is a lot of variety. Medium, cream, Oloroso and Amontillado are just a few special types, so you have to find out for yourself which product you particularly like. The Bodega Williams & Humbert is known for its sweeter blends, all of which are matured using the special Solera process, in which different barrel vintages are repeatedly blended together. Amontillado Blend The Montillado sherry variant is a special maturation process. The addition of yeast cultures creates a foamy layer of flor yeast. This prevents the distillate from reacting with oxygen. After a certain time, the yeast cultures die off and the so-called 'oxidative maturation' begins. The result is a very dry sherry. 'Blend' in this case indicates that a large proportion of Amontillado is still contained in order to be clearly perceptible, but it has a more noticeable sweetness. As you like it This special bottling was already available in the 1970s, but after falling demand and a general decline in interest in expensive sherry, it was discontinued. It is all the more pleasing that an untouched Solera from those years has been preserved. Since this was dry Amontillado, the As you like it series was intended to commemorate an old custom. Back then, people liked to add a little sugar to the strong, old Amontillado to make it more palatable. This time, the new edition of As you like it is the blend described above.
