The Hooghoudt company, founded in 1888, fits seamlessly into the long line of traditional companies. The company was founded as a liqueur and spirits manufacturer by the married couple Grietje and Jan Hooghoudt in what is now the center of Groningen. In the beginning, the two experimented with extracts of various herbs and spices on the basis of current scientific publications at the time. The aim was to transfer as many aromas and active ingredients as possible from the raw materials into the finished liqueur. The Hooghoudt family's success proved them right, and due to the high demand for the high-quality products, the production facilities had to be expanded for the first time in 1914. All ingredients used in production are 100% natural and processed by hand. Although mainly genever and liqueurs are produced, rum and whiskey also leave the distillery. The recipes for all products are designed together by the founder Fred van Zuidam and his son Patrick. The two men work according to the principle of an artist and see the individual aromas as colors that together must create a harmonious picture. Fred van Zuidam's wife is responsible for the unusual design of the bottles, which is intended to express the character of each product. The history of the Zuidam distillery The young Fred van Zuidam once had the vision of founding a small distillery from which only traditionally produced and very exclusive spirits would leave. In 1975 his dream finally became reality and he set up his own small distillery. At that time the entire company premises only covered 300 m² and the first genevers were distilled in a small pot still. This was not to change in the years that followed, when success initially failed to materialize. It was only after a good 10 years that Zuidam's products were finally established on the market and ever since Helene van Zuidam took over the design of the bottles, sales figures have risen steadily. The company premises have now grown to over 3500 m² and production takes place in four copper pot stills. The distillates then mature in a large storage cellar in over 1000 oak barrels. The brothers Gilbert and Patrick van Zuidam are now responsible for the four production lines, but are supported by their parents. The Jonge Graan Jenever from Zuidam Zuidam Jonge Graan Jenever is based on a special recipe from Patrick van Zuidam. The mash consists of equal parts corn, rye and barley malt. After fermentation, a triple distillation follows and the very pure distillate is then distilled again with various botanicals, such as juniper and liquorice root. Zuidam Oude Genever 1.0L 38% Best ingredients The master distillers of Zuidam still produce their products in the traditional way. All ingredients are 100% natural and only the best quality is used. The exact recipes of the respective spirits were created together by father Fred and son Patrick van Zuidam. The malted barley, rye and corn used for Zuidam's Genever are still milled in the old-fashioned way by Dutch windmills. In addition to its traditional character, the milling process by windmills also has a very practical advantage. The slow rotation of the millstones means that there is virtually no frictional heat that could affect the quality of the respective flour. The production of Genever After grinding, the mashing begins. For this, the ground corn, rye or malted barley is mixed with hot water and the enzymes break down the starch into sugar. This is followed by fermentation, which takes place at a very low temperature, which gives the genever its fruity aromas. After a week of fermentation, the mash is distilled three times by hand in copper pot stills. The company's Korenwijns are even distilled four times. In the small pot stills, the alcohol vapors come into contact with a particularly large copper surface, which reduces the proportion of undesirable substances in the end product. Parts of the fresh distillate are then distilled again with a secret mixture of herbs and spices and filled into barrels together with the fine spirit from the first distillation process. All products used by Zuidam are 100% natural and carefully selected. Another special feature of the distillery is that it is still family-run. All recipes for the products produced there are developed in collaboration by Fred van Zuidam and his son Patrick. They see their products as a kind of painting, which is painted with aromas instead of colors. Zuidam places just as much emphasis on the packaging as on the quality of the products. Zuidam Oude Genever 1 Jahre 1,0L 38% Im 17. Jahrhundert legte der Physiker Franciscus Sylvius mit der Kreation des ersten Genever den Grundstein für eine weltweite Erfolgsgeschichte. Der damalige Genever war jedoch kaum mit dem heutigen vergleichbar, und noch weniger mit modernem Gin. Aufgrund mangelnden Wissens und Know-Hows waren die Rohdestillate damals rau, brandig und kantig. Die Mazeration mit Wacholder diente neben ihren angeblich heilenden Kräften auch dazu, den Geschmack des Genevers zu verbessern und abzurunden. Old Tom Gin war der nächste Entwicklungsschritt, benötigte jedoch immer noch zusätzliche Süße, um den damaligen Konsumenten zu gefallen. Erst mit der Erfindung des innovativen Column-Still-Verfahrens konnten reine und weiche Rohbrände produziert werden, was den Weg für den heutigen Dry Gin ebnete. Bei Zuidam wird dennoch traditioneller Genever destilliert, nun jedoch mit einer reichhaltigen Erfahrung von 50 Jahren. So entsteht der Zuidam Oude Genever 1 Jahr, der nach ständiger Suche nach Perfektion schließlich den Weg zu den Verbrauchern findet. Der Zuidam Oude Genever 1 Jahr wird aus gleichen Teilen Roggen, Gerste und Mais hergestellt. Nach traditionellem Mahlen der Körner in Windmühlen wird die Maische bei kühlen 20 °C fermentiert, wobei der erste Alkohol aus den Zuckern gebildet wird. Nach fünf Tagen wird das entstandene Bier dreimal destilliert, um einen klaren, aber hocharomatischen Rohbrand zu gewinnen. Nach diesem Prozess in handgefertigten Kupfer-Pot-Stills wird eine speziell festgelegte Mischung aus Gewürzen und Kräutern zugegeben und erneut destilliert, um den einzigartigen Geschmack zu erzielen. Der Oude Genever reift dann in amerikanischen Weißeichenfässern und entwickelt seinen finalen Charakter. In der Nase zeigt er klare Noten von Wacholder, kombiniert mit Vanille und dezenter Eiche. Am Gaumen ergänzen sich diese Aromen mit wundervollem Toffee und dem in England bekannten Fudge, was ein volles, leicht fruchtiges Erlebnis schafft, das den alten Genever auf heutige Standards hebt, ohne seine Herkunft zu verleugnen.
