Traditionally, arrack was used as a base for punch and originally came from Batavia in what is now Indonesia. Ceylon Arrack is produced by Rockland Distilleries in Sri Lanka. The base is palm wine, a secretion that comes out of the fruit of coconut palms as soon as it is scratched (similar to the Kutschuk harvest or the extraction of resin from native conifers).

This juice that comes out contains a high proportion of sugar and is fermented after the harvest and then distilled. It is aged in barrels made of native Halmilla wood for an indefinite period of time. Light golden in color, Ceylon Arrack has a fine, subtle coconut aroma, which is supported by fine, spicy aromas of cinnamon and toffee.

Ceylon Arrack also has a slight sweetness and is dry and fruity in the aftertaste. Perfect for rediscovering a variety of punches or reinterpreting contemporary cocktail recipes.
