The spirit of Louisiana

Anyone who has ever been to Louisiana knows it: the early morning fog that often lies over the state in the Gulf of Mexico. The many swamps and rivers mean there is a very humid, subtropical climate, which leads to an average humidity of up to 70% and this morning phenomenon.
They wanted to capture this spirit and created the 'Bayou XO Mardi Gras Rum'. It matures for up to 6 years in bourbon barrels using the Solera method and is finished in sherry barrels. This not only creates the wonderfully deep mahogany color, but also an exquisite aroma.
This has clear smoky notes and the aroma of dark fruits such as plums and blackcurrants, as well as the sweetness of tupelo honey.

Tupelo tree

Tupelo honey, which is obtained from the flowers of the tupelo tree, is mainly produced in the swamps and river valleys of Florida and Georgia. Since the beginning of the 20th century, around 100 beekeepers have dedicated themselves to producing single-variety tupelo honey with the help of the western honey bee. Tupelo honey is known for its special aroma. With almost twice the fructose content of glucose, it is significantly sweeter than honey we know in our latitudes. The color also stands out from the honey we are familiar with; in tupelo honey it is light gold with a greenish shimmer. The taste is described as very heavy, spicy aroma.

Cartavio Rum XO 18 Years, 0,7 L, 40%

Cartavio Rum XO 18 years 0.7L 40% Cartavio Rum takes its name from the city of the same name in the district of Santiago de Cao in Peru. Initially, the "Grace Sugar Company" processed molasses residues from sugar production, but as early as 1891, sugar cane was deliberately grown for rum production. The Unidas distillery, which produces Cartavio Rum, places great value on the most modern production techniques, without losing sight of tradition. Cartavio Rum has been sold since 1929 and this XO was first introduced in 2009 to mark its 80th anniversary.Cartavio works with two stills. An old pot still produces heavy, very complex rums, while a modern continuous distillery produces light and fresh rums. Both rum styles have found their way into this excellent XO, whose individual spirits have matured for 18 to 30 years in various barrels such as ex-sherry, ex-bourbon and French white oak barrels. The long maturation period gives the rum an incredibly soft aroma and the large number of different barrel types ensures an incredible taste complexity. The dark amber-colored rum offers a firework of aromas on the nose such as tobacco, chocolate, vanilla and leather. The palate also reveals an incredible variety of aromas of toffee, baked banana, raisins, pepper and oak. The aftertaste is very, very long and wonderfully velvety.

Bayou Spiced 0,7L 40%

Bayou Spiced 0.7L 40% Production of Bayou Rum The manufacturer attaches great importance to regionality, which is why the rum is made from sugar cane grown in the south of Louisiana. One of the oldest sugar mills still in operation was selected to process the sugar cane, which produces the basis for the rum, the molasses. The finest Creole baking spices are allowed to rest in the Bayou Rum for 30 days. This creates a unique spiced rum that is full of The rum is usually stored for a long time in bourbon barrels using the Solera process. Aromas As special Creole baking spices are used for the Bayou Spiced, the rum has a much spicier aroma than the Bayou Reserve Rum. Notes of cinnamon and banana can be smelled on the nose. The palate enjoys a great mixture of even more complexity but at the same time a mild structure. Here, too, you can clearly detect banana, along with the expected spices such as vanilla, cloves, allspice and pepper. A sweet note of maple accompanies the great baking spices.

Bayou Reserve Rum 0,7L 40%
Bayou Reserve Rum 0,7L 40%

Bayou Reserve Rum 0.7L 40% Louisiana Rum The oldest sugar mill in the USA was brought on board to produce the molasses, which is used as a base. They process the sugar cane grown in southern Louisiana into the required molasses, which is then distilled in copper pot stills. The solera system was mainly chosen for storage. The solera process involves mixing rums of different ages. The barrels are stacked in a pyramid shape, with the oldest barrels in the bottom row and the youngest at the top. If you want to bottle a batch, you use the lowest, oldest barrels. The resulting empty space is then filled with the next oldest from the rows above, which in turn is filled with the one above, and so on. The advantage of this storage method is a 'natural' mixing interval which should ensure a consistent taste and the same quality. Taste profile In the mouth, the Bayou Reserve Rum has rather dry oak notes accompanied by the aroma of dark fruits. There are also pronounced apple and cinnamon aromas, and maple can also be detected in the background.

Bayou Special Release Single Barrel Rum 0,7L 40%
Bayou Special Release Single Barrel Rum 0,7L 40%

Bayou Special Release Single Barrel Rum 0.7L 40% Bayou Distillery In 2011, three boys from Louisiana who have been friends since childhood had a special idea. They wanted to breathe new life into the drink that was once produced around the waters of Bayou and had fallen into oblivion. Since the basic ingredient for rum also has a history in Bayou dating back to 1700, it was quickly clear which spirit to choose. Rum had been produced in earlier years, but none of them had been able to gain a foothold in the high-price segment. The idea of Bayou rum was born, which is linked to old traditions, such as the introduction of the oldest sugar mill in America, and the latest technology in the form of distilleries. Bayou Special Release Single Barrel Rum This limited edition matures in rye barrels after distillation to achieve a complex aroma. Compared to the Bayou Reserve Rum, this one has significantly stronger aromas. The aromas are smoked oak, spicy pepper and sweet honey notes. Fruity notes can also be detected, reminiscent of tropical fruits.
