Louisiana Rum
The oldest sugar mill in the USA was brought on board to produce the molasses, which is used as a base. They process the sugar cane grown in southern Louisiana into the required molasses, which is then distilled in copper pot stills. The solera system was mainly chosen for storage. The solera process involves mixing rums of different ages. The barrels are stacked in a pyramid shape, with the oldest barrels in the bottom row and the youngest at the top. If you want to bottle a batch, you use the lowest, oldest barrels. The resulting empty space is then filled with the next oldest from the rows above, which in turn is filled with the one above, and so on. The advantage of this storage method is a 'natural' mixing interval which should ensure a consistent taste and the same quality.
Taste profile
In the mouth, the Bayou Reserve Rum has rather dry oak notes accompanied by the aroma of dark fruits. There are also pronounced apple and cinnamon aromas, and maple can also be detected in the background.
