Pisco - Peru or Chile?
While Pisco still has outsider status in Germany, the clear distillate made from grape must is considered the absolute national drink in Chile and Peru. Each of the two countries proclaims to have invented its production and also claims the right to be the sole producer of Pisco. In Chile, only Chilean brandy can be sold under the name Pisco, and the situation in Peru is very similar. The fronts are hardened and the topic of Pisco is repeatedly the cause of legal disputes and arguments between the two countries.
Of course, there is no clear and objective answer as to whether the best Pisco comes from Peru or Chile. Especially not when you look at the more than 400-year history. The fact is, however, that the long tradition and the immense passion for Pisco in both Chile and Peru creates outstanding products that are certainly unrivalled in their aroma and taste.
Production of the Ocucaje Mosto Verde Quebranta:
One of the leading brands in the field of Peruvian Pisco is Ocucaje. Only the best Pisco grapes are used for production; in the case of the Ocucaje Mosto Verde Quebranta, the famous Quebranta grapes are used. These are pressed and the must is then fermented. The name "Mosto Verde" signals that the fermentation is stopped prematurely and a certain amount of residual sweetness remains in the must. This gives a very characteristic taste profile.
Furthermore, a special distillation process is prescribed for Peruvian Pisco, which has been perfected at Ocucaje. The fermented grape must is distilled only once and after three months of storage it goes straight into the bottle - without dilution. It is therefore of fundamental importance to use only the best part of the distillate. This requires a great deal of experience on the part of the distillers.
It should also be noted that the Ocucaje Mosto Verde Quebranta, like all other Peruvian Piscos, is bottled without additives and comes to your home completely naturally. Many rum producers could certainly learn a thing or two from this.
Tasting the Ocucaje Mosto Verde Quebranta:
The Ocucaje Mosto Verde Quebranta is crystal clear and, thanks to its drinking strength of 42.5%, wonderfully oily and highly viscous. The nose presents a very characteristic aroma right from the start, which only the Quebranta grapes can provide. The direction is certainly comparable to good pomace, but a much more intense fruitiness emerges. There are also delicate muscatel notes and hints of dried wild berries.
On the tongue, the Ocucaje Mosto Verde Quebranta is distinctly fruity and highly complex. The interplay of sweetness, fruit and piquant acidity is wonderfully harmonious. The tannin structure is restrained and very well integrated. The Ocucaje Mosto Verde Quebranta is a pleasure even on its own, but only reveals its true class in a traditional Pisco Sour.
