Highland Park is the northernmost distillery in Scotland and is located between the capital of the Orkney island of Kirkwall and the small town of Holm. A special feature in the production of the whiskeys is the water used. This comes from a nearby spring that has very hard water. Soft water is usually used, which is the best for distilling. A second special factor is the peat from Orkney. Due to the harsh climate and strong storms, hardly any trees grow there. That is why Orkney peat consists mostly of compacted and decomposed heather plants. Wings of the Eagle The eagle that stands on the sacred tree Yggdrasil stands for wisdom and knowledge in Viking legends and the beating of its mighty wings creates the wind that sweeps over the earth. Orkney has exactly these powerful winds. In the winter months they reach top speeds of up to 100 miles per hour. Trees cannot survive these strong winds and that is why the moorland there is 'forestless', i.e. without trees. However, the soil there is particularly rich in heather. This represents the characteristic, aromatic peaty smokiness of the Highland Park whiskies. Wings of the Eagle also represents the wild climate that prevails on the island group. Nosing-Tasting-Finish The typical Highland Park taste of the smoky peat is of course not lost here either. It is a spicy whisky with a strong character and reveals a harmonious combination of aromas that are 'as complexly layered as the wings of an eagle'.
