The distillate goes through four distillations, with carefully selected herbs such as juniper berry, licorice root and aniseed being added. The malt wine is then aged with the other ingredients in small wooden barrels. The aroma is characterized by vanilla, fruit compote, rye and wild flower honey. The Zuidam Special No. 23 Oude Genever Oloroso, 30 years old, is a barrel-aged genever from Zuidam Distillers, distilled on January 24, 1990 and then aged for 30 years in an Oloroso sherry cask. This special and extremely old "Oude Genever" was bottled on October 20, 2021 with an alcohol content of 38% in a 1 liter bottle, as a limited single cask edition of 198 bottles. The bottle is presented in a luxurious box together with two Zuidam gin glasses.
