Anyone who has ever looked into rum in more depth will at some point come across the term 'Rhum Agricole'. This is rum that is made from fresh sugar cane juice instead of molasses. These are often found in the French overseas departments, including a distillery, 'Trois Rivieres', which has committed itself to this method of production. They are also the only ones to bear the so-called AOC seal for a protected designation of origin.

Another guideline of the AOC seal is that a Rhum Agricole can be given the addition VOSP if it has matured for at least four years.
The amber-colored rum already has clear ester notes on the nose. There are also notes of roasted wood and red fruits that invite you to taste them. These also dominate the palate and develop into floral notes with vanilla.

Trois Rivieres Pave Ambre Rum 0.5L 40% The Trois Rivieres distillery on Martinique, which has existed since the 17th century, is known for its extremely high-quality Rum Agricole. It is a typical agricultural rum and only accounts for around 5% of total rum production. In contrast to conventional rum, Rum Agricole is made from fresh sugar cane juice and not from molasses. The aroma of the fresh juice is the icing on the cake, if you will, which makes the special taste. One of these quality products is the 'Pave Ambre Rum', which was stored for between 12 and 18 months in special French oak barrels. The storage gave the rum a slightly orange color, the aroma is subtly sweet with floral notes. It is surprisingly soft on the palate, which speaks for its young age. Notes of spices are mixed in, as is caramel and an aroma reminiscent of toasted white bread.

Trois Rivieres Rhum Agricole Double Wood Ambre 0.7L 43% Master distiller Daniel Baudin paid particular attention to the maturation process. In a first phase, the distilled rum matures for seven months in large steel tanks with a capacity of 40k liters and in American oak barrels. These barrels made of American white oak give the rum notes of dark chocolate, cocoa and coffee. In a second phase, the matured rum is transferred to smaller barrels in which whisky was previously matured, with a capacity of just 200 liters. The second maturation lasts 9 months and gives the rum its outstandingly soft structure.
