The Balvenie Distillerie
The whisky distillery based in Dufftown, Banffshire, Scotland has been producing single malt Scotch whisky since 1892. The Balvenie was founded by none other than William J. Grant, who also founded Glenfiddich, and is located not far from it. In order to save costs, The Balvenie initially used used stills from the Lagavulin and Glen Albyn distilleries; today the distillery has a total of nine stills. David Stewart, who produced for both Glenfiddich and The Balvenie, was responsible for this.
The Creation of a Classic Single Malt – the original cask finish
With the words 'Probably the finest Highland malt whisky', David C. Stewart MBE once presented the first The Balvenie Classic Single Malt. For the first time, a single malt that had initially been stored in traditional oak casks was filled into Orloroso sherry casks for a finish. Stewart was thus pioneering work in finishing in a wide variety of wooden casks.
The taste
Firstly, you notice notes of vanilla and a variety of spices on the nose. These are supported by earthy, malty undertones. On the palate, the aromas are complemented by oat syrup, toffee and other spice notes. Oak wood and certain fruity notes, influenced by storage in sherry casks, are also recognizable. The finish is long-lasting and characterized by oak wood notes.
