Ailsa Bay Distillery
In 2007, another distillery was built on the site of the Girvan distillery. This is the 'Ailsa Bay Distillery', which is now presenting its second bottling.
It produces whisky using the so-called 'micro-maturation process'. This means that the so-called pipe spirit is first filled into small Hudson Baby Bourbon barrels with a capacity of 25-100 liters before being transferred to first and second fill barrels made of American white oak for a further year.
Micro-Maturation Series
The new bottling is Release 1.2 Sweet Smoke, which is a shade smokier and also sweeter than its predecessor.
The aroma offers notes of fresh wood smoke, sweet oak, a hint of vanilla and heather. On the palate, the notes of vanilla and oak become significantly more intense. As expected, there are significantly more intense smoky notes and the aroma of caramel compared to its predecessor.
