Cultural asset from Spain

Anyone who wants to delve into the world of sherry flavors should try to start with a product from home. Andalusia, or rather the area around Jerez, is known worldwide for high-quality (and sometimes really inexpensive!) wines and sherries. You should do a bit of reading beforehand, as there is a lot of variety. Medium, cream, Oloroso and Amontillado are just a few special types, so you have to find out for yourself which product you particularly like.

The Bodega Williams & Humbert is known for its sweeter blends, all of which are matured using the special Solera process, in which different barrel vintages are repeatedly blended together.

Amontillado Blend

The Montillado sherry variant is a special maturation process. The addition of yeast cultures creates a foamy layer of flor yeast. This prevents the distillate from reacting with oxygen. After a certain time, the yeast cultures die off and the so-called 'oxidative maturation' begins. The result is a very dry sherry.
'Blend' in this case indicates that a large proportion of Amontillado is still contained in order to be clearly perceptible, but it has a more noticeable sweetness.

As you like it

This special bottling was already available in the 1970s, but after falling demand and a general decline in interest in expensive sherry, it was discontinued. It is all the more pleasing that an untouched Solera from those years has been preserved. Since this was dry Amontillado, the As you like it series was intended to commemorate an old custom. Back then, people liked to add a little sugar to the strong, old Amontillado to make it more palatable. This time, the new edition of As you like it is the blend described above.

Dos Maderas Rum PX 5 + 5, 0,7 Liter, 40%
Dos Maderas Rum PX 5 + 5 years 0.7L 40% The history and production of Dos Maderas Rum PX 5 + 5 The Dos Maderas Rum PX 5 + 5 is no ordinary rum. The story of the Dos Maderas Rum PX 5 + 5 begins in the Caribbean. There, the individual rums for the Dos Maderas Rum PX 5 + 5 are distilled from the best sugar cane in Guyana and Barbados. Guyana and Barbados represent a centuries-old rum tradition. While Guyana is known for very powerful, intense rums, the rums from Barbados are characterized by their fine, aromatic nuances. After the individual rums for the Dos Maderas Rum PX 5 + 5 have been blended by master hands, they mature for at least five years in the tropical temperatures of the Caribbean. Barrels made of American white oak are used for storage; they are particularly popular because of their mild aroma. After this initial storage period, the Dos Maderas Rum PX 5 + 5 is imported by Williams & Humbert to Jerez in Andalusia, Spain. Here the Dos Maderas Rum PX 5 + 5 is matured for a further three years in barrels that once contained the best sherry. The Dos Maderas Rum PX 5 + 5 is finished for two years in former Pedro Ximinez (PX) sherry barrels, the high-quality contents of which remained in the barrel for over 20 years. This unusual and very exclusive maturation process gives the Dos Maderas Rum PX 5 + 5 its unusual and very fine aroma! The taste of the Dos Maderas Rum PX 5 + 5 The unusual storage of the Dos Maderas Rum PX 5 + 5 is naturally also reflected in the taste. The Dos Maderas Rum PX 5 + 5 has intense dried fruit aromas on the nose, such as peach, dates and figs. Why & Mel Whiskaramel liqueur, 0,7L 24%
Why & Mel Whiskaramel Liqueur 0.7L 24% From Spain to the whole world The history of the Spanish manufacturer Williams & Humbert Bodega began more than 130 years ago. With the "Why & Mel Liqueur", the world-renowned company has brought a really good liqueur onto the market, which is almost unique with its special taste experience. By storing wine and brandy in a special way, for example using the Solera process, the company was able to focus on production, which is mainly focused on exports. It has been characterized by its entrepreneurial finesse since the beginning, as it has entered into various partnerships and collaborations over the years, which have now led to it being included in Spain's largest list of trading companies. All of Williams & Humbert's technical facilities can be found along the country road in the bodegas that connects Jerez and El Puerto. This includes the systems for fermenting, mixing, cooling and bottling all the delicious spirits on offer. Visually, The black bottle stands out particularly well from other products because the logo and lettering are in striking colors. The liqueur itself, however, boasts a bright amber color. The distillate is shiny and shines in the glass. Naturally caramel With “Why & Mel”, a liqueur was created that is blended on the basis of carefully selected malt whiskeys and refined with natural caramel. During production, the focus was on a selection of high-quality malt whiskeys that were allowed to age in American oak barrels. The pleasant accent of caramel can be detected even on the nose. A distinctive aroma When you try it, “Why & Mel” reveals itself Mel" fills the palate, while the mild nuances create a memorable aroma. The sweetness was brought into a pleasant balance with the necessary balance. The finish is more creamy thanks to the caramel. Tasting note The liqueur should be served very cold, neat or with ice. Williams & Humbert Dry Sack Medium Sweet Solera Especial 15 Yo 0,5L 20,5%
Williams & Humbert Dry Sack Medium Sweet Solera Especial 15 years 0.5L 20.5% Williams & Humbert Anyone who doesn't know the company yet will probably assume it's a British company because of the name. Although it has British origins, it is now a distillery in Jerez de la Frontera, Andalusia. As early as 1877, Sir Alexander Williams, a wine expert for sherry wines, and Arthur Humbert, a specialist in international relations at the time, dedicated themselves to the Williams & Humbert Bodega. They became known above all for their special storage and the resulting special quality. This is the solera process. Solera process The Dry Sack Medium Sweet Solera Especial 15 years is also a sherry that was produced using the solera process. The barrels are stacked in a pyramid shape, then a certain amount is taken from a barrel in the bottom row and filled into a barrel in the row above. This is continued until the top barrel, where the final product is then found. Products made using this process therefore always contain a mixture of short, medium and long-aged distillates. Dry Sack 15 Años Solera Especial Due to the long maturation of 15 years, this sherry is bursting with complexity and at the same time appears elegant and mature. Nuts and the aroma of dried fruit are clearly in focus, but accompanied by raisins and figs. Despite the significantly sweeter touch, it also has tart barrel notes. It is a sweet, 'medium sweet' sherry that goes particularly well with sweet desserts, chocolate or as an aperitif.

Williams & Humbert Canasta 20Yo Cream Sherry 0,5L 20%
Williams & Humbert Canasta 20 Years Cream Sherry 0.5L 20% Quality liqueur wine from Andalusia For the Canasta 20 Years Cream Sherry, a balanced blend of three grape varieties was chosen: Sobretablas, Palomino and Pedro Ximenez. Storage takes place according to Humbert & Williams in the Solera method, as well as in the Criaderas system in oak barrels. The corresponding aromas are created by the oxidation of the wood with the moisture and oxygen. Taste in the sample There are two well-known names for this type of sweet Oloroso Sherry: “Oloroso Dulce” or “Cream”, as is the case with this product. It is very gentle on the palate, velvety and warming due to the alcohol content. Aromas are clearly dried fruit and nuts, and a subtle association with raisins and browned sugar also spring to mind when tasting it. This cream sherry goes best with almost any kind of dessert, but if you like, you can also drink it neat. In that case, however, it should be well chilled or at least drunk with a little ice.

Williams & Humbert Jalifa Solera Especial 30 Yo Amontillado 0,5L 20%
Williams & Humbert Jalifa Solera Especial 30 Years Amontillado 0.5L 20% Many special features characterize this collector's item: Solera Especial Collection Jalifa 30 Years Amontillado is another product in the Solera Especial Collection of the well-known Williams & Humbert Bodega from Andalusia. In addition to it, there are two other products in the series, the Palo Cortado Dos Cortados and the Pedro Ximenez Don Guido. All three have the additional designation VORS, which means that they are wines that are over 30 years old. Maturation This special bottling also requires a special type of grape. The Palomino grape variety from the Balbaina terroir in Las Conchas was chosen for this. The Amontillado sherry variant has undergone a special maturation process. First, it matures for several years covered in a foam-like layer made up of flor yeast. After a certain time, these yeast cultures die off and oxidative maturation sets in. The distillate is now exposed to the direct influence of oxygen. The taste The aromas are similar on both the nose and the palate, but complement each other with a few notes on both sides. The first impression is of fruit, caramel and roasted almonds. Notes of herbs, tobacco and nuts quickly join in. The Jalifa Amontillado also has a salty taste. The complexity of this VORS sherry becomes clear when vanilla, spices and oak notes are added. In the long finish, the nut aromas are much more present.
