The Gooseberry and Elderflower Gin is made from fresh gooseberry juice and distilled elderflower in the still. This carefully extracts the delicate flavours at higher pressures but lower temperatures to ensure the best parts of the base are retained.

The sweet and tangy gooseberry pairs perfectly with the fragrant elderflower. Additional citrus and earthy botanicals give the gin depth and warmth. The result is a perfect bittersweet drink.

Gooseberry and elderflower This Wessex Gin combines the piquant-sour notes of gooseberries with the sweet, fruity aroma of elderflowers. Gooseberries find their way into the gin in the form of juice, and elderflowers are also distilled into juice. This is done in a vacuum still. Here, the aromas can be extracted under high pressure but at lower temperatures. This is a gentler method and produces a stronger aroma.
