The special features
After this already special Rhum Agricole has completed its maturation period in ex-bourbon barrels, it is not bottled at cask strength but is given a kind of 'infusion' of salty sea water.

Tasting
When you open the bottle of Trois Rivieres, the first notes you notice are sugar cane and wood smoke. Dried fruit, tobacco and the aroma of oriental spices fill the room second. On the palate, the aroma of sugar cane is joined by other spice components and a pleasant spiciness from white pepper rounds off the taste. The finish of the Trois Rivieres de L'ocean Rhum is long and refreshing. Light mineral notes blend in and harmonize particularly well with the notes of roasted wood.

Trois Rivieres Pave Ambre Rum 0.5L 40% The Trois Rivieres distillery on Martinique, which has existed since the 17th century, is known for its extremely high-quality Rum Agricole. It is a typical agricultural rum and only accounts for around 5% of total rum production. In contrast to conventional rum, Rum Agricole is made from fresh sugar cane juice and not from molasses. The aroma of the fresh juice is the icing on the cake, if you will, which makes the special taste. One of these quality products is the 'Pave Ambre Rum', which was stored for between 12 and 18 months in special French oak barrels. The storage gave the rum a slightly orange color, the aroma is subtly sweet with floral notes. It is surprisingly soft on the palate, which speaks for its young age. Notes of spices are mixed in, as is caramel and an aroma reminiscent of toasted white bread.

Trois Rivieres Rhum Agricole Double Wood Ambre 0.7L 43% Master distiller Daniel Baudin paid particular attention to the maturation process. In a first phase, the distilled rum matures for seven months in large steel tanks with a capacity of 40k liters and in American oak barrels. These barrels made of American white oak give the rum notes of dark chocolate, cocoa and coffee. In a second phase, the matured rum is transferred to smaller barrels in which whisky was previously matured, with a capacity of just 200 liters. The second maturation lasts 9 months and gives the rum its outstandingly soft structure.
