The history of the Kaniché Rum Reserve

The Kaniché Rum Reserve is produced in Barbados. Rum production on this Caribbean island has a long tradition. The first documented mention of the production of rum in Barbados dates back to 1647. However, there is evidence that rum was already being produced in Barbados at the beginning of the 17th century. The quality of the products at that time had little to do with top rums such as the Kaniché Rum Reserve. Due to the low price, they were mainly drunk by slaves and locals, while European immigrants drank fine cognac and sherry.

Over time, however, distillation methods improved so that rum became a spirit of equal quality and was also drunk in Europe and North America. The triumph of rum continued and rum is now the most produced spirit in the world. It is produced in countless distilleries on five continents. Although the variety of rums is almost overwhelming, connoisseurs still consider the distillates from Barbados to be among the best in the world. This is mainly due to the very good raw materials and the traditional production methods of the distilleries located there. The Kaniché Rum Reserve is also produced in such a distillery.

The production of the Kaniché Rum Reserve

In addition to the Caribbean, the Kaniché Rum Reserve is also closely linked to the Cognac region in Ars/France. This is due to its unusual maturation process - the so-called "double ageing". After distillation, the Kaniché Rum Reserve first matures for several years in selected oak barrels in Barbados. The Kaniché Rum Reserve is then shipped to France at cask strength, where it is further matured for up to a year in cognac barrels in the cellar of the traditional house “Cognac Ferrand”. This type of maturation in two different types of barrels gives the Kaniché Rum Reserve additional aromas that give it a wonderful taste profile.

The taste of the Kaniché Rum Reserve

In the bouquet, the Kaniché Rum Reserve initially shows aromas of grapes, peach and orange zest. These are rather unusual for a rum and result from storage in cognac barrels. Nuances of cognac can also be detected on the palate in the Kaniché Rum Reserve, although these are dominated by typical rum aromas such as banana, sugar cane, vanilla and a little smoke. In the long and warming aftertaste of the Kaniché Rum Reserve, the aromas of both spirits then combine to create a wonderful finish! The Kaniché Rum Reserve is recommended without reservation to rum and/or cognac lovers who like to experiment!

However, the Cuban rum expert Don Pancho recently set up his home to support the Central American country with rum. Behind the rum from Panama is the renowned cognac house Ferrand, which is actually better known for its ever-new Planations rums. The Kaniche brand itself initially specialized in Barbados, but is now taking a different direction with the Kaniche Rum Perfeccion. Like most rums, Kaniche distills it from molasses according to old traditions and then stores it in former bourbon barrels made of American white oak. In this type of barrel, the rum completes its first maturation phase in the local climate. Here you will find the optimal climatic conditions for storing rum. If you take a look at the geographical location of Panama, you will notice that there is a confluence of air from the Pacific and heat from the Caribbean. The resulting microclimate of stable temperature and humidity is ideal for storing rum and for growing sugar cane. The soil also plays an important role in cultivation. Panama has volcanic soil that is rich in minerals and is therefore particularly suitable for very aromatic sugar cane. After distillation, the sugar is transported to France and transferred to cognac barrels.
