The history of Dutch genever
Genever from the Netherlands is one of the most traditional European spirits. Even if genever is no longer particularly widespread today, its importance for the variety of spirits is of immense importance.

The first recipes from the Netherlands that refer to the addition of juniper to neutral alcohol come from the German-born physician Dr. Franciscius de la Boe, who taught in the Netherlands in the 17th century. Dr. Franciscius de la Boe, also known as Dr. Sylvius, was convinced that juniper has a positive effect on the human organism and in particular on the kidneys and bladder. Genever was ultimately developed on the basis of his recipes, to which other flavoring herbs and spices were added over the years. It is no longer possible to fully clarify whether this was for medicinal purposes or to mask the often sharp taste of the alcohol. What is fact is, however, that the tasty genever quickly became the national spirit of the Netherlands and was eventually exported to Great Britain. The English also took a liking to the aromatic distillate and modified it to suit their own ideas. However, as genever was difficult for the British to pronounce, they shortened the word and called it gin from then on. Genever is therefore the forerunner of gin and is therefore of great importance for today's variety of spirits.

The Hooghoudt Originele Oude Graanjenever
The Hooghoudt spirits and liqueur manufacturer is one of the most traditional Dutch spirits producers and is still owned by the family. The factory was founded in 1888 by the married couple Grietje and Jan Hooghoudt in the center of what is now the city of Groningen. In 1920, Grietje distilled Hooghoudt's first genever, the "Oude Klare". The family business is now run by Bert Hooghoudt in the fourth generation. Under his leadership, the portfolio was expanded and significant changes were made to the product design, so that Hooghoudt is now a modern company that is looking to the future with confidence.

The Originele Oude Graanjenever from Hooghoudt is probably the company's most traditional bottling and is produced according to a recipe from the pre-war period. The moutwijn used matures for 17 years in Andalusian ex-sherry oak barrels before distillation. This special form of storage can be clearly tasted in the Hooghoudt Originele Oude Graanjenever, which, in addition to the typical malty notes and aromas of juniper, also has nuances of sherry, vanilla and oak. The Hooghoudt Originele Oude Graanjenever is a very complex genever and is best enjoyed slightly chilled and neat.

This is followed by fermentation, which takes place at a very low temperature, which gives the genever its fruity aromas. After a week of fermentation, the mash is distilled three times by hand in copper pot stills. The company's Korenwijns are even distilled four times. In the small pot stills, the alcohol vapors come into contact with a particularly large copper surface, which reduces the proportion of undesirable substances in the end product. Parts of the fresh distillate are then distilled again with a secret mixture of herbs and spices and filled into barrels together with the fine spirit from the first distillation process. At Zuidam, new barrels made of American white oak and former bourbon whiskey and oloroso sherry barrels are used for barrel storage. By storing the small barrels in a dry barrel warehouse, the spirits from Zuidam mature relatively quickly. A disadvantage of this method is the high evaporation rate ("Angels Share") of 4-5% per year. Very old Genever The Oude Genever from Zuidam has a high proportion of grain Eau de Vie, which gives it an extremely rich and complex taste. In addition to juniper, aromatics include aniseed and licorice root. After some time in the barrel, the Zuidam Zeer Oude Genever has an intense malty aroma with delicate herbal notes and offers a particularly delicate drinking experience.

The development of the Zuidam distillery In 1975, Fred van Zuidam founded the Zuidam distillery with a clear vision. His distillery should only produce very exclusive products, which are manufactured in a very traditional way. With just one pot still and a small production line, Zuidam began producing his first spirits on 300 m². However, success was not forthcoming and it took over 10 years before Zuidam had earned a reputation as a producer of the highest quality distillates. However, Zuidam was only able to establish itself on the market when his wife Helene von Zuidam began to take care of the design of the bottles. Nowadays, the two brothers Patrick and Gilbert take care of the production and marketing of the products - under the constant supervision of their parents, of course. The distillery site now includes four copper pot stills, four production lines and over 1000 oak barrels on a good 3600 m². What does Zuidam Oude Genever 5 years taste like Only the very best barrels are selected for this special bottling from Zuidam. The genever stored in them is made from barley, wheat malt and corn. After fermentation and distillation of these basic products, various botanicals such as aniseed, juniper and liquorice root are added for maceration. This is followed by storage in barrels made of the best oak for at least 60 months. On the nose and palate, the genever shows fascinating aromas of malt, oak, vanilla and toffee. The long aftertaste is also very malty and extraordinarily smooth. A great genever!
